these lemony cupcakes were insanely lemony and insanely good. I adapted it from a vegan recipe here, where I replaced the soy margarine and vegetable oil for more butter and cream (sinful, I know!). They were drizzled with a lemon-sugar syrup as soon as they came out of the oven, and then topped with lemon cream cheese frosting. I learned that using icing sugar makes the tops of the cupcakes nice and crispy, and the insides soft and moist! Mmmm, definitely making these again.
